EAST WEST BREAKFAST image

Recipe for Time after Time

Number Of Ingredients 9

1 medium onion chopped
1 medium celery stalk chopped
1/3 c bell pepper red
1/3 c bell pepper green
1/2 c water
4 large potatoes, boiled and peeled
1 c cooked rice
1 tsp ground cumin
1 Tbsp soy sauce, light

Steps:

  • 1. In a large skillet saute the onion, celery, and bell peppers in 1/4 cup water.
  • 2. Add the potatoes and remaining 1/4 cup water.
  • 3. Cook stirring gently until the vegetables are tender, about 5 minutes.
  • 4. Stir in the rice, cumin, and soy sauce.
  • 5. Cook stirring until the bottom browns lightly about 2 minutes.
