BRATWURST WITH SAUERKRAUT AND POTATOES

Steps:
- Simmer the sauerkraut for 10 minutes in boiling salted water. Drain.
- Meanwhile, in a large skillet, soften the onions in the butter, browning lightly. Add the sauerkraut, wine, stock, sugar, vinegar, salt and pepper. Bring to boil, turn down, cover and simmer, stirring occasionally, for 30 minutes.
- Meanwhile, simmer the bratwurst in water to cover for 20 minutes.
- Add the potatoes to the sauerkraut in the skillet and cook, covered, for 15 to 20 minutes or until tender.
- While the potatoes are cooking, drain the bratwurst and brown lightly on all sides under a hot broiler.
- To serve, put the sauerkraut and potatoes on a heated platter and arrange the bratwurst over the top.

- Heat a skillet over medium-high heat and coat with cooking spray. Quickly brown the pork chops on each side. Set aside.
- Arrange sweet potato slices in the bottom of a 3 to 4 quart slow cooker. Cover with the onion slices, then the apple slices. Sprinkle brown sugar, nutmeg and salt over the apples, and grind a little pepper. Place the pork chops on top of the pile, and cover with sauerkraut. Cover, and cook on Low for about 5 hours. It can go an extra hour without drying out though.
- Serve pork and vegetables with juice from the slow cooker spooned over them.

- In a large bowl, combine the sauerkraut, onion, apples, corn syrup, bay leaves, caraway and pepper. Spoon half into a 5-qt. slow cooker; top with potatoes. , Broil pork chops 6 in. from the heat for 3-4 minutes on each side or until browned; place over potatoes. Spoon remaining sauerkraut mixture over pork. , Cover and cook on high for 1 hour. Reduce heat to low; cook 4-5 hours longer or until meat is tender. Discard bay leaves.

- 1. Season the ribs with salt,pepper,garlic and paprika. Let marinade several hours or overnight. Place the ribs and a small amount of water to prevent burning in a 350 degree oven,cover and bake until tender.
- 2. Cut larger potatoes in half,sprinkle with salt and pepper,remove the ribs,cut in serving size pieces. Place potatoes in the same baking dish,add undrained sauerkraut and place the ribs on top,bake until potatoes are tender. The juice from the sauerkraut and from the ribs help cook the potatoes.

- 1. In a large zip loc plastic bag, combine the flour,mustard, garlic powder, and sugar. Add roast and shake to coat evenly. In a small kettle or a large skillet brown the roast in the oil on all sides.
- 2. While this is browning; In a medium bowl, combine the sauerkraut,onion,apple,corn syrup, thyme,brown sugar and pepper. Mix well. Spoon 1/2 the mixture into your sprayed 5 quart slow cooker.
- 3. Top with potatoes..when roast has browned on all sides place on top of the potatoes.
- 4. Spoon remaining sauerkraut mixture over pork. Cover and cook on high for 1 hour. Reduce to low- cook 5 hours longer until meat is tender.

- Combine 3 cups flour, baking powder, 1/4 teaspoon salt, egg and warm water in a medium size mixing bowl. Mix well.
- Knead the dough, adding flour until the dough in stiff and hard to work with, let the dough rest.
- Roll dough into a 1/2 to 3/4 inch wide cylinder.
- Bring a pot of salted water to boil. Using scissors cut dough in 1/2 to 3/4 inch pieces into the boiling water. The dumplings will sit on the bottom of the pot until almost done. When almost finished cooking, the knoephla will rise to the surface. Once they have risen to the surface let them cook 2 minutes longer. Drain well.
- Place oil in a large skillet and heat over medium-high heat. Add potatoes and salt and pepper to taste. Fry until potatoes are cooked through and golden brown.
- While potatoes are frying, place 1 tablespoon butter in a non-stick skillet, heat over medium-high heat. Cook the kneophla in batches, transferring the fried dumplings into the skillet with the potatoes.
- When all of the knoephla and potatoes are nicely browned and combined in one skillet, add the sauerkraut to the mixture and heat through. Serve immediately.

- 1. Melt 3 T. butter in large skillet. Over medium heat, brown the apples and onions in the melted butter, until they are nicely caramelized and tender, stirring constantly.
- 2. Put WELL-RINSED AND DRAINED sauerkraut in the pan with the apples and onions. Sprinkle the brown sugar over all, and toss well in the browned butter that's in the pan.Turn to LOW, add the beer, black pepper and [optional] caraway seed. Cover. Cook the sauerkraut/apple/onion/brown sugar/beer mixture over very low heat, stirring occasionally, until it's caramelized and a nice, golden brown color. I have actually let mine cook for as much as a couple of hours, on VERY LOW heat. Stir occasionally, to bring the browned stuff up from the bottom and give the rest of it a chance to brown. Don't let it burn, but a very slight scorch is a good thing. When it's browned to your satisfaction, slide it off the heat,and let it sit.
- 3. ABout 1/2 hour before you want to eat, prepare the bratwurst: In a large skillet, place the bratwurst, water, and 2 T. of butter. Bring to a boil, then turn heat down to med., and cook 10 - 12 minutes, turning occasionally, until water evaporates and bratwurst begin to brown. The water will cook the brats through, and then all boil out, but the butter will cling to the brat skins, and brown them nicely. Turn, as needed, to keep them from burning on one side.
- 4. While brats are simmering/browning, do the Bacon Onion Potatoes: preheat a large saute' pan on medium, 2 - 3 minutes. Cook the bacon until crispy, and chop it into small pieces. Pour off most of bacon grease, but do not wipe out pan. Place bacon pieces, onions and vinaigrette in pan and cook 5 - 6 minutes, stirring frequently, until onions are caramelized. Add remaining ingredients, cover and simmer on LOW until potatoes are cooked through, approx. 25 minutes. Keep covered so the won't cook dry. You can add a splash of beer, if necessary, and if desired, to keep potatoes moist and to "steam" cook them. Stir occasionally, gently, to keep from breaking potatoes apart.
- 5. IF YOU DESIRE: after the brats are nicely browned, you can put them IN with the kraut, and smother them together for awhile, to let flavors blend, OR serve separately.
- 6. Serve with dark brown bread and butter, some applesauce, and dark brown mustard. A real authentic German meal, as prepared in the Hessen style. The photos are mine, just as I made it two nights ago. It was fabulous!

- Pour the large can or jar of sauerkraut, with juice, on one side of crock pot.
- Drain 2 cans of potatoes and put on other side of crockpot.
- Pour the other can of potatoes with juice inches.
- Cut up meat into small chunks and put on top.
- This must go for 10 hours on low (at the least) for the flavor of the meat to get to potatoes.
- I substitute large can of sauerkraut with my own homemade and substitute the potatoes with one quart jar of my canned potatoes with a little of juice.

- Boil peeled potatoes (cut in quarters) until tender but not mushy. Drain, and add to the pan the amount of sauerkraut for the number of people you've planned to feed. Also add hot dogs cut into 1 inch pieces. Heat everything, but watch carefully to avoid burning. Add butter if desired. We always ate this with mustard for the sauerkraut and hot dogs.
- The next day my mother would heat leftovers in a frying pan, letting the sauerkraut get brown.

- Mix the potatoes and the kraut.
- Place half the sauerkraut/potato mixture in a Pyrex pie plate.
- Spread 1 1/2 tbsp of mustard over the sauerkraut.
- Place the chops on the sauerkraut.

- Cover with remaining sauerkraut/potato mixture.
- Season with salt & pepper.
- Put the pat of butter on top.
