This glaze is really wonderful on salmon, but equally delicious on swordfish, halibut, tuna, or any other firm, full-flavored fish.

4 (8 ounce) fresh salmon fillets
salt to taste
⅓ cup cold water
¼ cup seasoned rice vinegar
2 tablespoons brown sugar
1 tablespoon hot chile paste (such as sambal oelek)
1 tablespoon finely grated fresh ginger
4 cloves garlic, minced
1 teaspoon soy sauce
¼ cup chopped fresh basil

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Season salmon fillets with salt.
  • Place salmon on the preheated grill; cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.
  • Combine water, rice vinegar, brown sugar, chile paste, ginger, garlic, and soy sauce in a small saucepan over medium heat.
  • Bring mixture to a boil, reduce heat to medium and simmer until barely thickened, about 2 minutes.
  • Sprinkle basil on top of salmon; spoon glaze over basil.

1/4 cup extra-virgin olive oil, plus more for the skillet
3 tablespoons soy sauce
2 tablespoons toasted sesame oil
1 tablespoon minced fresh ginger
1 tablespoon pure maple syrup
1 tablespoon Chinese mustard
1 tablespoon Sriracha
2 cloves garlic, minced
4 6- to 7-ounce skin-on salmon fillets
1 bunch scallions, chopped
Sesame seeds, for topping

Steps:

  • Combine the olive oil, soy sauce, sesame oil, ginger, maple syrup, Chinese mustard, Sriracha and garlic in a large bowl. Pour one-third of the mixture into a small bowl and reserve. Add the salmon fillets to the large bowl. Cover and let marinate in the refrigerator for 30 minutes.
  • Heat a large nonstick skillet over medium-high heat. Add a drizzle of olive oil to coat the skillet. Add the salmon skin-side down and cook until crispy, 5 minutes, lowering the heat if the glaze starts to get too dark in the pan. Baste the flesh side with the reserved marinade. Flip and cook until the salmon is cooked through and the flesh side is golden brown, 3 to 4 more minutes. Transfer to a platter and top with the chopped scallions and sesame seeds.

½ cup ginger ale
½ cup water
1 lemon, juiced
1 tablespoon lemon zest
2 cups frozen sweetened raspberries, thawed
¼ cup sliced fresh ginger
¼ cup white sugar
2 salmon fillets
2 teaspoons olive oil
sea salt to taste
ground black pepper to taste
1 tablespoon lemon zest, divided

Steps:

  • Mix ginger ale and water in a saucepan, and bring to a boil. Reduce heat to a simmer; stir in lemon juice, 1 tablespoon lemon zest, raspberries, and sliced ginger. Bring to a boil, and cook over medium heat for 30 minutes, stirring occasionally. Strain the sauce through a fine strainer into a clean saucepan; discard solids. Stir sugar into strained sauce, bring to a boil over medium heat, reduce heat, and simmer until the sauce has thickened, about 10 minutes. Remove from heat, and allow to cool while you prepare the salmon.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Coat salmon fillets with olive oil; sprinkle with sea salt, black pepper, and 1 tablespoon of lemon zest. Place salmon fillets into a broiler-proof baking dish. Brush salmon fillets generously with raspberry sauce.
  • Bake in the preheated oven until salmon is almost opaque in the center and the fish flakes easily, about 10 minutes. Turn on the oven's broiler, and broil the fillets until browned, 2 to 3 minutes. Serve with extra sauce if desired.

2 tablespoons Dijon mustard
1 tablespoon grated fresh ginger or 1 teaspoon ground ginger
4 (6 ounce) salmon fillets, about 1 inch thick,skined

Steps:

  • Spray the rack of broiler pan with non-stick cooking spray.
  • Preheat broiler.

1 1/2 lbs salmon fillets
1/4 teaspoon cracked black pepper
1 tablespoon butter
lemon juice
2 tablespoons white vinegar
2 tablespoons red raspberry preserves

Steps:

  • Preheat oven to 400 degrees.
  • Put butter and just enough lemon juice to cover bottom of a shallow pyrex baking dish.
  • Put in oven until butter is melted.
  • Wash salmon and cut into serving pieces.
  • Place in baking dish with skin side down, sprinkle with pepper and bake for 20 minutes, or until fish flakes.
  • Glaze: whisk vinegar and raspberry preserves until well blended.
  • Set aside.
  • To remove skin, slide a spatula under the fillet and the skin will remain in the baking dish.
  • Place on serving plate and drizzle with glaze.
  • I suggest rice and asparagus spears to accomyany this entree.
