1 envelope unflavored gelatin
1/2 cup cold water
1 cup heavy whipping cream
3/4 cup sugar
1 cup sour cream
1/2 teaspoon vanilla extract
1 package (10 ounces) frozen sweetened raspberries, thawed
Fresh raspberries and mint sprigs, optional

Steps:

  • In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Bring to a boil; cook and stir until gelatin is dissolved. Remove from the heat; set aside. , In another saucepan, heat whipping cream and sugar over medium heat until sugar is dissolved and mixture is lukewarm. Remove from the heat; stir in gelatin mixture until completely dissolved. Cover and refrigerate until slightly thickened, about 30 minutes., Stir in sour cream and vanilla. In each of four parfait glasses, place a scant 1/4 cupful of cream mixture; top each with a rounded tablespoonful of raspberries. Repeat layers. Top each with scant 1/4 cup of cream mixture. , Cover and refrigerate for 3 hours or until set. Just before serving, garnish with fresh raspberries and mint if desired.

1 envelope (1 tablespoon) unflavored gelatin
1/2 cup cold water
1 cup heavy whipping cream
1-1/2 cups sour cream
1 teaspoon vanilla extract
4 to 5 cups fresh fruit (bite-size pieces)

Steps:

  • In a saucepan, combine sugar and gelatin. Stir in water; let stand 5 minutes. Bring to a boil, stirring constantly. Remove from the heat; stir in whipping cream. , In a bowl, combine sour cream and vanilla. Add gradually to hot mixture; mix until smooth. Pour into a 4-cup bowl or mold. Cover and chill for 4 hours or overnight. Serve over fruit.

1 cup white sugar
1 cup all-purpose flour
2 tablespoons all-purpose flour
1 ¾ cups sour cream
1 cup white sugar
1 teaspoon lemon juice

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch springform pan.
  • Combine eggs and 1 cup sugar in a large bowl; beat with an electric mixer for 5 minutes until mixture is smooth and thick. Sift 1 cup plus 2 tablespoons flour on top and carefully mix into the batter using a wooden spoon or a spatula. Pour batter into the prepared springform pan.
  • Bake in the preheated oven until a toothpick inserted into the middle of the cake comes out clean, 25 to 30 minutes. Allow to cool in the pan for 10 minutes. Remove from pan and allow to completely cool on a wire rack, about 1 hour.
  • Combine sour cream, 1 cup sugar, and lemon juice in a large bowl; beat with an electric mixer for 10 to 15 minutes until a thick cream forms.
  • Cut cake horizontally into 3 layers. Place bottom layer on a cake platter and spread with a layer of cream filling. Add second layer and spread another layer of filling on top. Finish cake by placing the third layer on top and cover cake from all sides with the remaining cream. Cover and refrigerate until serving.

1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon pepper
1/2 cup mushroom, sliced
2 center-cut pork chops

1/4 cup low-fat sour cream

Steps:

  • Spray skillet. Heat it over medium heat. Add potatoes and brown lightly. Set aside.
  • Season chops with powders and pepper. Put a little oil in skillet. Cook chops for one minute on each side. Drain fat if necessary.
  • Add water. Cover and cook for 10 minutes.
  • Add potatoes and mushroom. Cook for 10 more minutes.
  • Stir in sour cream. Heat thoroughly, but don't boil.

3 tablespoons water
1 cup sugar
1 envelope plain gelatin
1 cup sour cream
1/2 teaspoon vanilla
papayas or blueberries (your choice, go for it)

Steps:

  • Mix together cream, sugar, and gelatin in a saucepan and heat gently until the gelatin is thoroughly dissolved.
  • Cool until slightly thickened.
  • Fold in sour cream and flavor with vanilla.
  • Whisk until mixture is quite smooth.
  • Pour mixture into a serving bowl or 3 cup metal mold.
  • If you want to make individual servings, pour into six small 1/2 cup individual molds.
  • Cover and chill until set, at least 4 hours.

1 cup whole milk
1/2 cup sugar
1 pinch salt
5 large egg yolks, beaten
2 cups heavy cream, chilled
2 tablespoons coffee liqueur, chilled
2 tablespoons vodka, chilled

Steps:

  • In a small saucepan, cook the milk, sugar and salt over medium-high heat, stirring occasionally, until the sugar dissolves, about 4 minutes (do not let the milk boil).
  • Slowly pour one-half of the hot milk mixture into the eggs, whisking. Pour the mixture back into the saucepan and cook over low heat, stirring and scraping with a heatproof spatula, until thick enough to coat the spatula, 8 to 10 minutes.
  • Strain the mixture into a metal bowl. Stir in the heavy cream. Refrigerate until cool, about 2 hours.
  • Stir the coffee liqueur and vodka into the ice cream base. Pour into an ice cream maker and process according to the manufacturer's instructions.

Packed with rice, chicken, veggies and a creamy sauce, these Russian-influenced pies are great for using up leftovers

125g long grain rice
50g butter
250g mushroom , roughly chopped
175g oyster mushroom
1 onion , finely chopped
2 garlic cloves , finely chopped
2 tbsp plain flour
300ml milk
425g cooked chicken
juice ½ lemon
150ml pot soured cream
pack dill , finely chopped
375g pack ready-rolled puff pastry
1 egg yolk , to glaze

Steps:

  • Boil the rice in enough water to just cover until the rice is al dente and the liquid has been absorbed - about 10 mins. Season, then set aside.
  • Heat a large frying pan, then add the butter. Once melted, fry the mushrooms and onion until golden. Season, add the garlic, then cook for another couple of mins. Stir in the flour and cook for 1-2 mins, turning the vegetables over in it. Now take the pan off the heat and gradually add the milk, stirring to incorporate every addition before you add any more. Once done, put the pan back on the heat and bring to the boil, stirring all the time as the sauce thickens. Season well and let the sauce simmer so that the flour gets cooked. Stir in the cooked chicken and add the lemon juice, soured cream and dill.
  • Spread the rice in the bottom of 6 buttered individual pie dishes, then spoon the meat and sauce on top. Leave it to cool a little. Roll out the pastry a little and cut to fit your dishes, then pop on top and press the pastry down. Trim off the excess. You can finish the pie crusts by making a long strip of pastry with the leftovers, twisting it like a rope. Moisten the edges of the pastry on the pies with water, then press on the rope of pastry. Otherwise just crimp the edges.
  • Heat oven to 200C/180C fan/gas 6. Make 3 slits in the centre of the pies, then brush the tops with egg yolk. Bake for 10 mins, then turn the heat down to 180C/160C fan/gas 4 and cook for a further 20-25 mins, until the pastry is golden and cooked.

l teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
½ cup (4 oz.) butter
1½ cups sugar
2 large eggs
1 teaspoon vanilla flavoring
1 cup sour cream
WALNUT TOPPING/FILLING
1 generous cup (about 4-5 ounces) roasted walnuts, coarsely chopped
¼ cup brown sugar
2 generous teaspoons ground cinnamon

  • Sift dry ingredients - the flour, baking powder, baking soda and 1. salt into a bowl. 2. Whisk the dry ingredients, mixing well. In the bowl of a heavy-duty mixer beat the butter and sugar with the paddle on medium speed until soft and light, about 5 minutes. 3. 4. Beat in the eggs one at a time, beating until smooth after each addition. 5. Add the vanilla flavouring and mix well. Decrease the mixer speed to low and beat in one-third of the flour mixture, followed by half the sour cream. Stop the mixer and scrape down the bowl and beater. Beat in another third of the flour mixture, then the remaining sour cream. Stop and scrape again. Beat in the remaining flour mixture. Caution don't over beat once you start adding the flour. 6. 7. To make the topping stir the ingredients together until evenly mixed. 8. Scrape half the batter into the prepared pan and sprinkle with half the topping. 9. Cover with the remaining batter. 10. Smooth the top and sprinkle with the remaining topping. Bake for 50 to 55 minutes, or until the cake is well-risen and deep gold and a toothpick inserted midway between the sides of the pan and the central tube emerges clean. 11. Cool in the pan on a rack for 30 minutes, then invert onto a plate and lift off the pan. Invert the cake onto a rack to cool completely. 12. Notes Scatter the walnuts onto a cookie sheet and roast in the oven for about 10 minutes. Watch carefully that they do not brown. Roasting your walnuts before you use them in baking gives you a lovely rich nutty flavour. Do it even if your recipes don't call for it. Keep this wonderful coffee cake wrapped in plastic or under a cake dome at room temperature, or double wrap and freeze for longer storage. 2 medium onions
1/2 cup grated Velveeta cheese

Steps:

  • Prepare the 4 steaks and brown them quickly in the olive oil. Transfer them to a baking pan, season with salt and pepper. Keep warm.
  • Chop the onions and soften them in the same frying pan. Spread them over the steaks.
  • Sprinkle with the grated cheese and pour over the sour cream. Cover with foil.

1.50 c heavy cream
3/4 c sugar
1.50 t unflavored gelatin
1 c sour cream
2 t vanilla extract
1.50 c seedless red raspberry preserves
1 T lemon juice
Fresh raspberries, for garnish

Steps:

  • Prepare the cream: In small saucepan, heat cream and sugar on medium, stirring, until sugar dissolves. Remove from heat; set aside.
  • In another small saucepan, sprinkle gelatin over 1/2 cup cold water and let stand 5 minutes to soften. Heat on medium until gelatin dissolves, stirring. Stir gelatin mixture into cream mixture. Transfer to medium bowl, then stir in sour cream and vanilla. Cover and refrigerate until mixture thickens to consistency of yogurt, about 30 to 45 minutes.
  • Prepare the raspberry sauce: In small saucepan on medium, heat preserves and lemon juice until hot. Press through fine-mesh sieve into small bowl; cool completely.
  • Layer cream mixture and raspberry sauce in 6 parfait or martini glasses or wineglasses. Cover each with plastic wrap and refrigerate until set, at least 2 hours and up to overnight. Top with fresh raspberries before serving.
