3 (7 ounce) bars milk chocolate with almonds candy (such as Hershey's® Milk Chocolate with Almonds)
1 cup miniature marshmallows

Steps:

  • Place the candy bars in a microwave safe bowl, and cook in the microwave on Low until melted, approximately 5 minutes. Stir and allow to cool enough to prevent the marshmallows from melting when added to the chocolate. Once cool, stir in the marshmallows and pour into a 8x8 inch baking dish. Refrigerate until firm, about 2 hours. Break into pieces to serve.

Found this years ago in a magazine, I have added the coconut to it so if you are not keen on that ingredient just leave it out. In The Netherlands I have a hard time finding mini marshmallows so I cut up large ones. Chilling time not included.

16 ounces dark chocolate or 16 ounces milk chocolate, whatever you prefer.
3 cups mini marshmallows
1 cup walnuts or 1 cup pecans
1/2 cup desiccated coconut (dried, shredded)

Steps:

  • Melt the chocolate in the top of a double boiler.
  • Line an 8x8 tin with foil (you can butter one but this is easy to lift out and peel away).
  • In a large bowl mix the marshmallows, nuts and the coconut.
  • Add the melted chocolate, mix well.
  • Spread into the prepared tin.
  • Chill, when firm cut into small pieces.

2 c milk chocolate chips
1 can(s) evaporated sweet milk
2 Tbsp butter, room temperature
1 pkg marshmallows, mini
1 medium microwave safe bowl
9x13 baking pan
wax paper
almonds, chopped

Steps:

  • 1. Use a medium size microwave bowl, put chocolate chips sweet milk & butter into the bowl. Microwave for 3 to 3 1/2 minutes.
  • 2. Stir mixture until smooth and creamy, it may need a few seconds more but try not to over cook the chocolate chips as they may burn.Add chopped almonds how ever many you would like 1/2 cup maybe one whole cup or any nut you may like.
  • 3. Once the mixture is smooth and creamy add marshmallows. pour into a lightly buttered pan or line it with wax paper.13X9 .. bigger bite are not better, since this is very rich in flavor.Enjoy

I make this candy every Christmas and everyone raves about it. The Almonds really make this candy fantastic.

Number Of Ingredients 4

2 (12 ounce) packages guiddard chocolate chips (milk chocolate)
marshmallows, mini (one-16 oz. and one-8 oz. package)
almonds, 2 cups (although I was told the more the better so I added an extra 1/2 cup)
1 tablespoon vegetable oil

Steps:

  • Roast almonds on cookie sheet at 350 degrees for 20 minutes.
  • Cool Chop Stir Chop
  • Melt chocolate with oil (if you use a microwave, put chocolate in large bowl microwave on high for 2 minutes stir and cook one minute longer.)(chocolate should be smooth)
  • Mix all ingredients until blended.
  • Press into cookie sheet filled with foil or saran wrap.
  • Cool for several hours
  • Cut into pieces.

1 cup semisweet chocolate chips
1 (1 ounce) square unsweetened baking chocolate
1 tablespoon butter
2 eggs
1 ¼ cups confectioners' sugar
½ teaspoon salt
1 teaspoon vanilla
2 cups salted peanuts
2 cups miniature marshmallows

Steps:

  • In a small saucepan over medium-low heat, melt chocolate chips, unsweetened chocolate and butter, stirring until smooth. Remove from heat.
  • In a large bowl, beat eggs until foamy. Beat in sugar, salt and vanilla until smooth and thick. Beat in chocolate mixture. Fold in peanuts and marshmallows.
  • Drop by spoonfuls onto waxed paper lined trays. Chill in refrigerator 2 hours, until firm. Keep refrigerated until serving.

Every time I was at the shop I looked at everything they had but always ended up in front of the Rocky Road? To this day the only candy that I can remember being in the shop is the Rocky Road. And what's not to forget? You have milk...

2 10oz. bag(s) marshmallows regular size
3 11.5 oz. bag(s) ghirardelli milk chocolate chips
2 - 3 c coarsely chopped walnuts, your preference

Steps:

  • 1. Open bags of Marshmallows and place in large bowl.
  • 2. Butter well, a 9" by 13" pan.
  • 3. Open all bags of Milk Chocolate and place in a microwave safe bowl and microwave 1 minute at 50% power 3 to 4 times while stirring each time until chocolate has melted. Watch carefully and do not overheat or burn. Note: if you want a very special Rocky Road (my favorite way to make this) then use Belgian Chocolate instead of the milk chocolate chips. I buy my Belgian chocolate from Trader Joe's and it is the large 1 pound bar of chocolate. I use 1 & 1/2 bars for a bag of marshmallows!
  • 4. Add chopped walnuts to marshmallows.
  • 5. Add all but about 1 cup of the chocolate to marshmallows and nuts.
  • 6. Blend until well incorporated!
  • 7. Pour mixture into buttered pan. Press mixture down as much as possible with large spoon or spatula.
  • 8. Use remaining chocolate on candy and ice top as you would a cake.
  • 9. Cover with plastic wrap and place in refrigerator to set.
  • 10. Hints: Once candy sets it does not need to remain in the refrigerator and is easier to cut when it is at room temperature. If you give as a gift it is best to cut in hunks rather than pieces to stay fresh longer. This is not necessary if you give the whole recipe as a gift, which I do all the time. Freezes well!

250 grams dark chocolate 70% (TJs, red package)
120 grams unsalted butter
30 grams golden syrup
10 pieces Chocolate bars - any you like - Twix, Kit Kats, Snickers
70 grams biscuits
40 grams Mini Marshmellos
1 handful M&M's

Steps:

  • 7X7 square tin, greased and lined Melt the chocolate, butter and golden syrup over a double boiler. Cut up 3-5 ini chocolate bars. Reserve about 1/3 of the chocolate in a separate bowl, and break up the biscuits and put into the 2/3s chocolate along with the mini marshmallows, and cut up chocolate bars. Put in the fridge for about 10 min. Take out and spread reserved chocolate over the top and put in the fridge for several hours or overnight. You can either add the M&Ms before you put in the fridge or after. Cut into squares.

I found this recipe on the inside label of EAGLE brand sweetened condensed milk about 15 years ago and have been making these ever since. You can still find the recipe on the EAGLE web site, but it no longer calls for the 2 types of chocolate chips...I think that's what makes it stand out. ENJOY

1 cup milk chocolate chips
2 tablespoons butter
1 can eagle brand sweetened condensed milk
2 cups peanuts
1 (10 1/2 ounce) bag miniature marshmallows

Steps:

  • In heavy saucepan, over low heat, melt chocolate chips and butter with EAGLE BRAND®; remove from heat. You can also do this in the microwave with the same results. Set power to 50% and stir after every minute.
  • In large bowl, combine peanuts and marshmallows; stir in chocolate mixture.
  • Spread on waxed paper-lined 13x9-inch baking pan. Chill 2 hours or until firm.
  • Remove from pan; peel off paper and cut into squares.
  • Store leftovers loosely covered at room temperature.
