RICE WITH VEGGIES & HERBES DE PROVENCE
This great side dish is so versatile, you can serve it with chicken, beef or seafood. This delicious rice is always appreciated by everyone. Tip: I cook my rice like pasta, this way it will not become sticky! fill your pot with salted water, bring to a boil. Pour rice in water, cook until grains becomes tender. Pour in strainer, let rice cool for a few minutes.

Steps:
- Cook rice as per instruction on package, reserve.
- In skillet, melt oive oil with butter, saute onions, celery, green pepper and mushrooms until tender.
- Add garlic, cook for another minute.
- Season with herbs de provence, salt and pepper.
- incorporate rice to vegetables.
- Add lemon juice, reserved cooking liquid, zests and parmesan cheese, mix well.
- Transfer into a serving dish.
- Serve with any meat you wish!

- Preheat oven to 350°F.
- In an oven-safe saucepan with a tight-fitting lid, heat oil until it shimmers. Add diced onion and sauté until soft and translucent, 3-5 minutes. Add garlic and sauté 30-60 seconds, until fragrant. Add rice and stir until rice turns opaque and smells nutty, 2-3 minutes. Add bay leaf, salt, pepper, herbes de Provence, orange zest and chicken broth. Bring to a boil.
- Stir pot once. Cover pan with a damp dish towel, apply the lid, and fold the corners of the towel up over the lid. Transfer to oven and bake 15 minutes.
- Remove pot to counter and leave UNDISTURBED 20 minutes. DO NOT remove the cover. At the end of this time, turn rice out onto a platter, remove bay leaf and orange zest, add olives and fluff with a fork before serving.

RICE WITH FRESH HERBS

Boiling rice is another easy way of making rice that yields a firmer and less starchy texture. You can even boil the rice ahead of time, refrigerate it for a few hours, and then finish it with the butter before serving warm or at room temperature. For the prettiest presentation, wait to stir in the herbs until just before serving.

- Bring a large pot of water to a boil over high heat. Add the rice and 1 tablespoon of the salt and cook, stirring occasionally, until the rice is tender, 12 to 15 minutes. Drain through a fine-mesh sieve and rinse under cold water to stop the cooking. Shake the sieve to drain as much water as possible.
- Melt the butter in a large nonstick skillet over medium heat. Add the rice and the remaining 1/2 teaspoon salt and stir with a heatproof rubber spatula to coat all the rice with the butter. Once the rice is warmed through, about 3 minutes, transfer the rice to a serving bowl and add the herbs plus additional salt, if needed. Stir with a fork to incorporate and fluff the rice and serve warm or at room temperature.
