WILD RICE & CHICKEN CASSEROLE image

I found this recipe at Taste of Home and it sounded great except for a couple of ingredients I didn't like. So I've changed it and made it into something quite a bit different. Photo: http://www.tasteofhome.com

4 to 5 c diced cooked chicken
1 c chopped celery
2 Tbsp butter
2 can(s) 10-3/4 oz. ea.) condensed cream of celery soup, undiluted
2 c chicken broth
1 small onion, chopped
1 c uncooked wild rice, rinsed and drained
1/4 tsp poultry seasoning
1 c cashew pieces
chopped fresh parsley
salt and pepper to taste

Steps:

  • 1. In a large skillet, brown the chicken and celery in butter.
  • 2. In a large bowl, mix soup and broth until smooth. Stir in the onion, rice, poultry seasoning, salt and pepper, and add the chicken mixture from the skillet. Mix well until all is blended.
  • 3. Place mixture into a greased 9x13-inch baking pan. Cover and bake in a preheated 350-degree oven for 1 hour. Uncover and bake 30 minutes.
  • 4. Stir, sprinkle with cashews and return to the oven for 15 minutes or until the rice is tender. Garnish with parsley.
