Tutu's Mango Bread image

This recipe was attached to my Tutu's refrigerator for decades. I first noticed it in the 1960s; mom said it was there since she was a child.

Number Of Ingredients 10

2 cups all-purpose flour
1 ½ cups white sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
½ teaspoon salt
2 cups chopped mango
½ cup chopped walnuts
¾ cup vegetable oil
3 large eggs, beaten
2 tablespoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
  • Sift flour, sugar, baking soda, cinnamon, and salt into a bowl. Stir in mango and nuts. Add oil, eggs, and vanilla and combine until just mixed, do not overmix or loaf will be tough. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out with little to no crumbs, about 1 hour. Loaf should pull away from sides of pan and bounce back easily when touched.
