White Rice with Herbs image

Number Of Ingredients 6

2 cups Chicken stock
1 tablespoon Canola oil
1 cup Medium or long-grain rice
1 Small white onion, finely chopped
2 cloves Garlic, minced
1 1/2 cups Coarsely chopped cilantro, parsley, chipil

Steps:

  • Bring stock to a bare simmer and add salt.
  • Heat oil in a heavy saucepan over medium heat, add rice and onion. Cook, stirring, until onion is soft. Add garlic and cook for about 30 seconds, til fragrant.
  • Stir in simmering stock and half of herbs. Bring to a boil, reduce heat, cover, simmer over low heat for 15 minutes. Let sit for 10 minutes.
  • Stir in remaining herbs.
