Turkey Pesto Wrap image

So many variations can be done to this wrap. Choose your own ingredients. You can buy the pesto. You can buy balsamic glaze or make it by reducing 1/2 cup balsamic vinegar and 3 tbsp honey.

FOR THE BASIL PESTO
1/2 c pine nuts
2 Tbsp lemon juice
2 clove garlic
1/2 tsp salt
1/8 tsp black pepper
2 c fresh basil leaves
1/3 c grated parmesan cheese
1/3 c extra virgin olive oil
FOR THE WRAP
1 large flour tomato tortilla wrap
2 Tbsp basil pesto
2 slice roasted deli turkey
1 slice aged white cheddar cheese
1 Tbsp sliced red onion
1/4 c pea shoots
drizzle balsamic glaze

Steps:

  • 1. First make the Pesto. Add all ingredients in food processor except olive oil. Drizzle the olive oil in while processing ingredients into a smooth sauce.
  • 2. To make the wrap lay out the tortilla flat. Spread 2 tbsp of the pesto over the wrap. Top with Turkey, cheese, onions, and pea shoots. Drizzle balsamic glaze over top and roll up. Enjoy
