Tropical Yams - Healthy Thanksgiving dish image

This is a healthy alternative to Sweet Potatoes with brown sugar and marshmallows. It's like a vacation in your mouth!

Number Of Ingredients 9

6 - 8 medium garnet yams 2 tsp.
1/2 c coconut milk or crème
1 1/2 c chopped pineapple reserve ½ cup for the top
3/4 c chopped pecans, reserve ¼ cup for top
1/2 c agave nectar
1 Tbsp cinnamon
1/4 tsp nutmeg
1/8 tsp cloves
salt to taste

Steps:

  • 1. Peel and cube the yams. Place in a 9X12 pre-oiled baking dish. Spray or drizzle oil (I use butter) on them. Cook at 350 for 30 minutes or until done. Mash the yams, add the coconut milk, agave nectar, pineapple, pecans, and seasonings. Mix well, put back in the baking pan, sprinkle with the reserved pineapple and pecans and serve.
  • 2. You can make this dish the day before and then reheat it in the oven or microwave right before serving. I like sprinkling the pecans on the top right before putting it on the table.
