4 large sweet potatoes (3-1/2 pounds)
1 can (8 ounces) crushed pineapple, undrained
6 tablespoons butter, melted, divided
3/4 teaspoon salt
Pinch pepper
1/2 cup crushed saltines
2 tablespoons brown sugar
Pinch ground cloves

Steps:

  • In a large saucepan, cover sweet potatoes with water; bring to a boil. Reduce heat; cover and simmer for 30 minutes or until tender. Drain and cool. , Peel the potatoes and place in a large bowl; mash. Add the pineapple, 2 tablespoons butter, salt and pepper; mix well. , Transfer to a greased 2-qt. baking dish. Combine saltines, brown sugar, cloves and remaining butter; sprinkle over potatoes. Bake, uncovered, at 375° for 30 minutes.

2 (29 ounce) cans sweet potatoes
2 tablespoons butter
1 tablespoon lemon juice
½ (16 ounce) package gingersnap cookies
1 (16 ounce) package miniature marshmallows

Steps:

  • In a medium saucepan over medium heat, mix the sweet potatoes, butter and lemon juice. Break the gingersnap cookies into the mixture. Stirring occasionally, cook until thick, about 15 minutes.
  • Cover the mixture with desired quantity of marshmallows. Remove from heat and cover 5 minutes, or until marshmallows have melted. Serve warm.

1/2 cup sugar
1/2 cup milk
1/4 cup butter, melted

1/4 cup sugar
1/4 cup all-purpose flour
1 can (8 ounces) crushed pineapple, undrained
1/4 cup butter, melted
2 eggs

Steps:

  • In a large bowl, combine the first seven ingredients. Pour into a lightly greased 9-in. square baking dish. Combine the topping ingredients; pour over potato mixture. , Bake, uncovered, at 350° for 45-50 minutes or until a thermometer reads 160°. Refrigerate leftovers.
