Tropical Coffee Cake image

Number Of Ingredients 10

1 can Pineapple, Crushed and drained
1 cup Coconut, flaked, unsweetened
1/2 cup Brown sugar
4 tablespoons Butter
4 cups Baking Mix
3 Bananas, minced and mashed
1/2 cup Brown sugar
1 1/3 cup Milk
3 Eggs
3/4 cup Brown sugar

Steps:

  • 1. Melt butter. Combine with drained pineapple, coconut, and 1/2 cup brown sugar. Set aside.
  • 2. Preheat oven to 400 degrees.
  • 3. Well oil a 9 x 11 baking dish.
  • 4. Mix baking mix, eggs, banana, milk, and 1/2 cup brown sugar.
  • 5. Pour batter into dish. Spread with pineapple mixture. Use a knife to cut mixture into batter gently. Sprinkle with final 3/4 cup brown sugar. Bake 400 degrees 30 minutes. Serve warm.
