3 medium ripe avocados
2 tablespoons lemon juice
1/4 teaspoon pepper
2 cans (10-1/2oz) plain or jalapeno bean dip
3 medium tomatoes, cored, seeded, and chopped
8 oz sharp cheddar cheese, shredded
1/2 teaspoon salt
8 oz sour cream
1 package taco seasoning mix
large round tortilla chips

Steps:

  • Peel, pit, and mash avocados with lemon juice, salt, and pepper. combine mayonnaise, sour cream, and taco seasoning mix. To assemble: spread bean dip on a large shallow platter. Then spread avocado over. Next layer sour cream mixture. Sprinkle with chopped onions, tomatoes, and olives. Cover with cheese and serve chilled or at room temperature with tortilla chips.
