Taffy Apple Salad image

When I was a new bride back in 1984, I purchased one of those recipe books where you can write in all your recipes. I set about acquiring recipes from my co-workers. One of them was this Taffy Apple Salad. It is still on that same paper. The recipe still stands the test of time. And yes, it does taste like Taffy Apples.

Number Of Ingredients 8

20 oz can chunk pineapple in own juice
2 c mini marshmallows
1 1/2 c spanish peanuts
3 apples (i used granny smith)
8 oz tub cool whip
1 Tbsp flour
1/4 c sugar
1 egg (well beaten)

Steps:

  • 1. Drain pineapples, set juice aside. Combine pineapples and mini-marshmallows, toss, refrigerate overnight.
  • 2. Take juice, combine with flour, egg and sugar. Heat until it thickens and is frothy. Let cool, refrigerate overnight.
  • 3. Next day: Chop apples with skins on. Place in bowl with marshmallows and peanuts.
  • 4. Put Cool Whip in with thickened stuff.
  • 5. Then combine it all and fold. Voila!
