Stuffed Flank Steak image

This is a slow cooked meal that is so tender and easy to make. You do not add any liquid to it as the moisture comes from the meat.

Number Of Ingredients 10

1 pkg crushed corn bread stuffing or you can make your own. i have done both.
1 c chopped onions
1 c chopped celery
1/4 c minced fresh parsley or tsp of dried
1 egg
1 1/4 c low sodium beef broth
1/3 c melted butter
1/2 tsp seasoned salt
1/2 tsp pepper (i used the coarse kind)
1 flank steak about 1 1/2 pounds

Steps:

  • 1. In a large bowl, combine stuffing, onion, celery and parsley. In a small bowl, beat the egg; stir in broth and the melted butter. Pour over stuffing mixture. Sprinkle with seasoned salt and pepper; mix well.
  • 2. Pound steak to 1/2 inch thickness. Spread 1 1/2 cups stuffing mixture over steak. Roll the steak up starting with the short side; tie with cooking string. Place in a 5 quart slow cooker. Any remaining stuffing can be wrapped tightly in foil and placed over the rolled steak. Cover and cook on low for 6 to 8 hours. (Since I work it cooks for almost 8 hours). Remove the string before slicing.
  • 3. I love my slow cooker as it allows me to make great meals during a work week!!!!
