SQUASH SKILLET image

This is a tasty healthy recipe for all and is especially diabetic friendly.

Number Of Ingredients 8

2 medium yellow squash, unpeeled & sliced
1 large zucchini, unpeeled & sliced
1 large tomato, cut into small wedges
1/2 tsp dried onion flakes
1 garlic clove, minced
salt to taste
freshly ground black pepper to taste
2 Tbsp butter

Steps:

  • 1. Melt the butter in a large nonstick skillet, turning skillet to coat well.
  • 2. Add the yellow squash, zucchini, onion flakes, garlic, salt, and pepper. Saute, stirring constantly, 3 to 4 minutes or until zucchini are crisp tender. Add the tomato wedges, cover and cook until the squash are of desired tenderness.
