Southern Oven Fried Chicken image

Being from Louisiana I grew up on Southern Fried Chicken. I now live in BC Canada. My husband is not much on fried foods so I decided to make it in the oven. The only difference is I use flour and cornstarch for my chicken.

chicken thighs and legs (skin on)
half cup all purpose flour
2-3 Tbsp corn starch
salt and pepper
garlic powder

Steps:

  • 1. I use chicken leg quarters or chicken thighs. You can use whatever chicken pieces you like. I season my chicken with salt, pepper and garlic powder. Mix the flour and cornstarch together and dredge my chicken. I place it on baking sheet with a rack. Bake it for 45-50 minutes. Depending on how much and what pieces you are using. I bake it at 425 degrees. Turning once about half way through cooking time.
  • 2. The chicken is juicy and just as crispy as fried chicken. The cornstarch helps in making it crispy. I do leave the skin on.
