Quick Orzo Pasta Salad image

Quick-cooking orzo makes this delicious cold pasta salad a breeze to make. And with fresh herbs and artichoke hearts, the flavor is just as refreshing!

Number Of Ingredients 10

2 cups orzo pasta, uncooked
3/4 cup KRAFT Zesty Italian Dressing
3 Tbsp. each chopped fresh parsley and basil
2 Tbsp. lemon juice
1 each green, red and yellow pepper, finely chopped
1 cup drained canned artichoke hearts, chopped
1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese
1/2 cup red onion wedges
1/2 cup KRAFT Shredded Parmesan Cheese
1/2 cup pitted Kalamata olives

Steps:

  • Cook orzo as directed on package, omitting salt; drain. Place in large bowl.
  • Whisk dressing, herbs and lemon juice until blended. Add to orzo with remaining ingredients; mix lightly.
  • Refrigerate 1 hour.
