So good So easy Vegetable Beef Soup image

My mother made this all my life and I made it for my children and now for my grandchildren. Smells incredible when cooking; serve it with a salad and french bread. I like it best the 2nd day after it is made.

2 lb beef stew meat
2 large chopped onions
1/2 bunch celery (chopped; use leafy tops too!)
6 large sliced carrots
1 can(s) green beans (14.5 oz)
1 can(s) corn (14.5 oz)
1 can(s) diced or stewed tomatoes (about 28 oz)

Steps:

  • 1. Fill pot with stew meat and water (so that it reaches 1/2 way up the sides). Bring to a boil, then cover, simmer for 1 hour, 15 min.
  • 2. Add onions and celery. Bring to boil, then cover, simmer 30 minutes.
  • 3. Add canned vegetables (do not drain!) along with salt and pepper (to your taste); Bring to a boil, then cover, simmer 1 hour, 15 minutes. (For flavors to mix. Enjoy!
