Sloppy Joe Cornbread image

My mom used to make this and I have no idea where she got the recipe. Its a good, quick supper, and economical, too. Mom was able to make a pound of hamburger serve 6 in so many ways. NOTE: Picture shows this recipe before adding cheese topping.

1 pkg (8 1/2 ounces) cornbread mix, like jiffy
1/3 c milk
1 large egg, beaten
1 lb lean ground beef
1/2 medium onion, chopped
1 can(s) (6 ounces) tomato paste
1 pkg sloppy joe seasoning mix
1 can(s) kidney beans, drained
1 1/4 c water
salt and pepper to taste
1 pkg (8 ounces) shredded cheddar cheese

Steps:

  • 1. Preheat oven to 350 degrees. Grease bottom only of a 9 by 13 inch pan. Prepare cornbread mix as directed on package using the milk and egg. Spread in prepared pan. Batter will be thin. Bake for just about 8 minutes or until golden brown.
  • 2. While cornbread is baking brown beef and onions in a skillet. Drain. Stir in tomato paste, seasoning mix, drained kidney beans, and water. Bring to a boil. Reduce heat and cook at a simmer for about 10 minutes. Add salt and pepper as desired.
  • 3. Pour meat mixture over warm cornbread. Sprinkle cheese on top. Broil just long enough to melt cheese. Serve by cutting in squares.
