1 Tbsp olive oil
1 Tbsp dark sesame oil
2/3 c small-diced red onion
1 1/2 tsp minced garlic
1 1/2 tsp minced fresh ginger
1/4 tsp crushed red pepper flakes
2 Tbsp red wine vinegar (or balsamic vinegar)
1/4 c light brown sugar - packed
2 Tbsp soy sauce
1/2 c creamy peanut butter
1/4 c ketchup
2 Tbsp dry sherry (optional)
1 1/2 tsp fresh lime juice

Steps:

  • 1. Cook the olive oil, sesame oil, red onion, garlic, ginger and red pepper flakes in a small heavy pot on medium heat until the onion is transparent - maybe 10 - 15 minutes.
  • 2. Whisk in the vinegar, sugar, soy sauce, peanut butter, ketchup, sherry, and lime juice while cooking a minute more. Cool
  • 3. Serve with cooked skewered chicken, or meat of your choice.
