ROASTED ASPARAGUS WITH LEMON AND CAPERS image

Number Of Ingredients 8

1 1/2 lb. asparagus, trimmed
4 T. extra-virgin olive oil
Coarse sea salt and black pepper to taste
1/3 c. vegetable oil
1/2 c. capers, preferably packed in salt, throughly rinsed and drained
Flour for dredging
Juice of 1/2 lemon
1/2 c. flat-leaf parsley, chopped

Steps:

  • Preheat oven to 450 degrees. Put Asparagus in oiled baking dish, sprinkle with olive oil and seaslon with salt and pepper. Roast for 15-20 minutes. Meanwhile, heat the vegetable oil in a small frying pan. Dredge capers lightly in flour, fry ovewr high heat until golden. Drain on paper towels. Arrange asparagus on serving dish, sprinkle with capers, lemon juice, and parsley. Serve hot or at room temperature.
