Raisin Snack Cake image

I had a can of raisin pie filling that needed to be used, and as I am not a pie baker, I decided to use the recipe from inside the can label. I adjusted it for the spices I had on hand. My kids love raisins, so this was a good snack for them. I think I would like to try it next time with a cream cheese icing.

2 1/2 cups flour
1 tablespoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons pumpkin pie spice
1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla
540 ml raisin pie filling

Steps:

  • Stir together flour, baking powder, baking soda, cinnamon and nutmeg, set aside.
  • In large mixer bowl, cream butter and sugar until light.
  • Beat in eggs and vanilla.
  • Add flour mixture to creamed butter mixture alternately with raisin pie filling, blending well after each addition.
  • Spread in greased 13x9 pan. Bake in 350 degree oven for 30 mins or until done.
  • Cool and serve.
