Quick and Easy Chili image

This chili is quick and easy if you want something fast and good. Chili is a personal thing. If you don't like beans, leave them out. More heat? Add it. Like green peppers in your chili, add them.

Number Of Ingredients 10

1 large onion, diced
1 can(s) (14 oz) diced tomatoes
2 can(s) (14 oz @) diced chili tomatoes (if you can't find these, use regular diced tomates and add a little more chili powder)
1 can(s) red kidney beans
1 package(s) vegetarian style ground beef crumbles (boca™ or morningstar farms™ have them) or 1 pound ground beef, cooked and drained
1 can(s) (6 oz) tomato paste
- salt to taste
- optional - sugar to taste to reduce the acid bite of the tomatoes
1 tablespoon(s) chili powder (more or less to your taste)
1 package(s) spaghetti, your choice, cooked and drained optional

Steps:

  • Saute onions in a little oil, until transluscent. (If using ground beef, saute along with the onions until done)
  • Place in a 4 quart pot along with all of the other ingredients.
  • Bring just to a boil, reduce heat, carefully check your seasonings and simmer 15 - 20 minutes, stirring occasionally. To serve, ladle over a bowl of spaghetti. Eat it plain with crackers or cornbread or ladle over a bowl of spaghetti for chili spaghetti.
