1 medium onion, chopped
1 medium green pepper, chopped
2 to 3 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon salt
1 can (14-1/2 ounces) Mexican stewed tomatoes
1 can (16 ounces) chili beans, undrained
1 cup frozen corn
Shredded cheddar cheese, optional

Steps:

  • In a large saucepan, cook the beef, onion and green pepper over medium heat until the meat is no longer pink; drain. Add the next 6 ingredients; cover and simmer for 20 minutes. Serve with cheese if desired.

Steps:

  • Cook and drain the pork.
  • In a large stockpot, saute onions and garlic in olive oil until transparent. Stir in the chilies, cumin, and oregano. Cook and stir 2 to 3 minutes more. Add broth, pork, and beans; bring to a boil. Reduce the heat to a simmer, and cook uncovered for 20 minutes.
  • Remove from heat, and stir in the cheese until melted.

2 onions
2 lbs ground beef, 90% lean
1 tablespoon chili powder
2 teaspoons salt

2 teaspoons dried oregano

2 (15 ounce) cans red kidney beans, undrained
2 (16 ounce) cans chopped tomatoes, undrained
grated cheddar cheese

Steps:

  • Saute onions in olive oil until translucent. add minced garlic and continue to saute until fragrant, about 30 seconds.
  • In dutch oven, brown ground beef. Drain and add onions and garlic.
  • Add spices and tomatoes with juice -- DO NOT DRAIN. Heat to boiling and simmer for one hour.
  • Add beans (also DO NOT DRAIN) and heat through, approximately 20 minutes.
  • Top with cheese and serve with hot biscuits or corn bread.
  • If in a hurry, you can cook onions and garlic with the beef, and also add the kidney beans at the beginning and simmer the whole thing for as little as half an hour. It turns out fine, it's just that the flavor is not as developed.

One day my husband gave me a challenge to try to come up with some way to use the crushed chips, at the same time one of my grandsons decided he was going vegetarian. So I took it on as a double challenge and also decided I could only use what I had on hand. This is how the recipe was born. Ingredients can be adjusted to fit whatever size casserole dish you might want to use. Serve with a dollop of sour cream and a side of mexican rice (optional) I make it in a large alluminum tray (20 3/4"L x 12 13/16"W x 3 3/8"D) the qty of the ingredients are for this pan but can be adjusted for any size casserole pan.

Steps:

  • Pour a third of one can enchilada sauce on the bottom of the pan, or just enough to coat the bottom.
  • Spread 4 cups of tortilla chips in an even layer on top of the sauce.
  • Spread 1 bag Simply Potatoes diced potatoes with onions over the chips.
  • Pour remaining open can of enchilada sauce over the potatoes.
  • Sprinkle 2 cups of shredded cheese and 1 cup cotija or parmesean over the sauce. Repeat layers again starting with the chips, then potatoes, 1 can sauce, then cheeses.
  • Last layer is chips the last can of sauce and the rest of the cheeses.

1 lb ground beef
1 medium onion, diced
1 large red chili pepper, seeded, diced
1/4 small green bell pepper, seeded, diced
1 can(s) (8 oz.) tomato sauce
1 c water
1 beef bouillon, cubes
1 can(s) pinto beans, bushe's chili beans
1 can(s) kidney beans, bushe's chili beans
1 can(s) tomatoes, del monte chili-style
SEASONINGS
1 tsp salt
1/4 tsp pepper
1 Tbsp chili powder
3 dash(es) cayenne pepper
THICKENER
1/4 c water
1 Tbsp corn meal or corn bread mix
1 Tbsp cornstarch

  • 1. Brown meat and drain excess fat
  • 2. Add diced onion and peppers, cook 2-3 minutes

  • Cook rice, according to package directions. I use 1/2 the amount called for. Saute garlic, onion, green pepper, and spices in olive oil until onion is transkucent, about five minutes. if using meat, I add it in now and cook until done. Add in remaining ingredients and heat. Serve over cooked rice. I add in tomatoe sauce if adding in meat. I also add rice in directly to chili and use tomatoe sauce to thin chili. Top with grated cheese and sour cream. Salt and Pepper to taste.

Mr. Food's Quick and Easy Italian Chili image

This is really a great tasting meal and you can suit it to your tastes. While the recipe calls for 1/2 pound of Italian sausage, the butcher misunderstood me an gave me a pound (I used the mild sausage), so I put it all in. The recipe also calls for 2 tablespoons of chili powder, but since the meal was intended for someone having chemo, I reduced it to 1 teaspoon which was like adding none, I suppose. Yet it was a great tasting meal. When Mr. Food says, "Oooh, it's so good!" he means this Italian chili.

1 lb boneless skinless chicken thighs, cut into 1/2-inch chunks
1/2 lb Italian sausage, casings removed
1 medium onion, chopped
3 (14 1/2 ounce) cans Italian stewed tomatoes, undrained
2 (15 ounce) cans cannellini beans, undrained
2 tablespoons chili powder
1 teaspoon ground cumin
1/4 teaspoon salt

Steps:

  • In a soup pot, cook chicken, sausage and onion over high heat 5-6 minutes,or until browned, stirring to break up sausage.
  • Stir in remaining ingredients and bring to a boil. Reduce heat to medium and cook 15 minutes, stirring occasionally.

Quick and Easy Chili image

This recipe is super easy to make. Not many ingredients and does not require a long cooking time. This comes together quickly and can easily be made as a weekday meal when you get home from work.

3 lb ground beef
1 medium onion, diced
1 can(s) tomato paste, 12 oz.
4 1/2 c water
2 pkg french's chili-o seasoning
2 can(s) brooks chili beans (i use mild), 15.5 oz cans

Steps:

  • 1. Brown ground beef with onion and drain fat.
  • 2. Add tomato paste and water; stir to combine.
  • 3. Add Chili-O and chili beans, stir to combine.
  • 4. Cover and let simmer until heated through.
  • 5. I serve with shredded cheese and oyster crackers. You can also use sour cream, jalapenos, Frito's, etc., whatever toppings you like.
