PUFF PASTRY SPINACH QUICHE image

1 sheet puff pastry, thawed according to directions on box
3 oz cream cheese
1/3 cup half & half
3 eggs
10 oz pkg frozen spinach, thawed, drained well, chopped
1/2 cup cheddar cheese, grated
1/4 cup Parmesan, grated
2 green onions, sliced
salt & pepper

Steps:

  • 1. Preheat over to 425 F. 2. Unfold puff pastry and place in baking dish. Roll up edges slightly as these will puff up and out. 3. Beat cream cheese until smooth. 4. Beat in half & half and eggs. 5. Mix in remaining ingredients. Pour into crust. 6. Bake until golden brown and filling is set, about 25-30 mins. 7. Cool 10 min before serving.
