Steps:
- Soak washed and sorted pinto beans overnight or in hot water for 4 hours. Strain out the water from the beans, and add them to salted water (approx 2-3 tsp salt). Bring to a boil, remove the foam that rises to the top, and lower heat. Simmer beans about 2-1/2 hours or until soft. Drain most of the water from the beans. Put some of the beans in a blender with some evaporated milk and blend. Repeat process, until all beans have been blended. Return beans to large pot. Add the bacon grease and chees, and while stirring, cook until the cheese is melted. Serve with tortilla chips.
