SOUTHERN PINTO BEANS



Southern Pinto Beans image

Number Of Ingredients 6

1 pound dried pinto beans
8 cups water
1 smoked ham hock (or substitute - see notes)
3 chicken bouillon cubes
1 medium onion, chopped
salt

Steps:

  • Inspect the beans to remove any small rocks or debris. Rinse well.
  • Place the beans, 8 cups of water, ham hock, bouillion cubes, and chopped onion in a large pot with a lid. Bring to a boil, then reduce the heat to a simmer. Add salt to taste. I usually add about 1 teaspoon, but the exact amount of salt needed will vary based on the sodium level in the brand of bouillon and your taste.
  • Cook over medium low for 1 1/2 to 2 hours or until tender to your liking. Remove the ham hock, shred the meat, and return it to the pot, if desired.

2 bags of pinto beans
Salt
Evaporated milk
Sharp cheddar cheese, cubed or shedded
3 tsp bacon grease

Steps:

  • Soak washed and sorted pinto beans overnight or in hot water for 4 hours. Strain out the water from the beans, and add them to salted water (approx 2-3 tsp salt). Bring to a boil, remove the foam that rises to the top, and lower heat. Simmer beans about 2-1/2 hours or until soft. Drain most of the water from the beans. Put some of the beans in a blender with some evaporated milk and blend. Repeat process, until all beans have been blended. Return beans to large pot. Add the bacon grease and chees, and while stirring, cook until the cheese is melted. Serve with tortilla chips.

Nailed it, finally!!! Fantastic sauce for tempura battered or grilled veggies like beans, asparagus, carrots, anything. I could just guzzle it out of the bowl :) We purchased the mayo at an Asian food store locally along with some fabulous 1 - 1 & 1/2 foot long green beans that we cut into 3 pieces each. Simply divine.

1 cup japanese mayonnaise, we used Kewpie brand (regular mayo will do the trick)
2 1/2 tablespoons sirachi hot chili sauce
6 green onions, whites only, coarsely chopped
4 garlic cloves, coarsely chopped
1/2 teaspoon prepared horseradish

Steps:

  • Place ingredients in blender or food processor and mix til smooth.
  • FOR THE VEGGIES:.
  • Make a tempura batter and dredge your green beans, asparagus or any veggie in it and either flash fry in oil on the stove or in the oven for a healthier spin.
