Savory Squash Casserole image

Most squash casserole I've ever had is very simple; squash, crackers, cheese. I found this recipe and changed it a little. It turned out pretty good. This makes a big 9x13 pan full since I usually feed a crowd.

Number Of Ingredients 8

3 lb sliced yellow squash
2 box chicken flavored stuffing (i.e. stovetop)
1 can(s) cream of chicken soup
1 can(s) cream of mushroom soup
1 c sour cream
1 large onion, diced
1/2 stick margerine
1 pkg shredded cheddar (3 cup bag)

Steps:

  • 1. Boil squash till slightly tender, drain.
  • 2. Sautee diced onions till tender in magerine.
  • 3. Mix together soups, sour cream, onions, 1.5 cups of the cheese & onions/magerine.
  • 4. Stir in stuffing mixes & squash.
  • 5. Spread in 9x13 pan.
  • 6. Top with remaining cheese.
  • 7. Bake at 350 till cheese on top is browned a little.
