6 whole wheat English muffins
1/2 cup extra virgin olive oil
8 ounces marinara sauce
1 6 ounce skim milk fresh mozzarella cheese ball, cut into 12 slices
1/2 cup grated Parmesan cheese

Steps:

  • Split the muffins into top and bottom halves and place with the cut side up on a cookie sheet lined with parchment paper or aluminum foil. Drizzle each half with olive oil. Spread the marinara sauce on each half and spread each first with a slice of mozzarella and then sprinkle with parmesan cheese. Broil until the cheese melts. Eggplant, mushrooms, onions, green peppers or hot peppers can be added. Use whole wheat pita bread for thinner crust pizzas.
