Panko-Parmesan Asparagus/w Garlic Dipping Sauce image

I am not a big fan of Asparagus, but this is delicious. My husband loved it. I served it with a hamburger steak.

1/4 cup(s) all purpose flour
1/4 cup(s) refrigerated egg product or 1 egg, slightly beaten
3/4 cup(s) panko bread crumbs
1/4 cup(s) grated parmesan cheese
1/4 teaspoon(s) black pepper
24 stalk(s) spears fresh asparagus, trimmed. use fresh only
1 - recipe garlic dipping sauce.
GARLIC DIPPING SAUCE (IN A SMALL BOWL COMBINE ALL INGREDIENTS BELOW)
1/4 cup(s) each of mayonaide and plain fat free yogurt
2 tablespoon(s) snipped fresh parsley
1 tablespoon(s) white wine vinegar
1 teaspoon(s) dijon mustard
1 clove(s) minced garlic

Steps:

  • Preheat oven to 400 degrees F. Coat a large baking sheet with Pam spray. Place flour in a shallow dish. Place beaten egg in a second dish. in a food processor combine panko, cheese, and pepper. Cover and pulse until fine. Transfer this to a third dish.
  • Roll asparagus spears in flour, dip in egg, then roll in panko mixture to coat. Place 1/2 in. apart on baking sheet. Sprinkle with any remaining panko mixture and lightly coat with Pam.
  • Bake 12- 15 minutes or until asparagus is tender and coating is golden brown. Serve warm with Garlic Dipping Sauce.
