Meatloaf Muffins image

Great for leftovers.

Number Of Ingredients 10

1 tsp olive oil
1 c onion, finely chopped
1/2 can(s) carrots, finely chopped
1 tsp oregano
2 clove garlic, minced
1 c tomato sauce
1 1/2 lb ground beef, lean
1 c saltine crackers, finely crushed(about 20)
2 eggs
1/2 c tomato sauce

Steps:

  • 1. Heat olive oil in skillet over medium-high heat. Add onion, carrot, oregano and garlic. Saute 2 minutes. Cool.
  • 2. Combine onion mixture, 1 cup tomato sauce, ground beef, saltines and egg. Mix well.
  • 3. Spray 12 muffin cups with cooking spray. Spoon in meat mixture.
  • 4. Top each 'muffin' with 2 teaspoons tomato sauce.
  • 5. Bake at 350 degrees for 25-30 minutes.
  • 6. Enjoy!
