Omelets is one of my favorites, there are just so many things you can add to them to change the taste. But I must admit sometimes I have problems folding them and my omelet may become scrambled eggs. So I came up with an open face omelet.

Categories     Eggs

Number Of Ingredients 6

2 - eggs
1 1/2 tablespoon(s) milk
2 teaspoon(s) sour cream
- salt and pepper to taste
- your favorite omelet add in, ham, bacon, cheese, pepper, onions, ect
1 tablespoon(s) butter

Steps:

  • In bowl whisk eggs, milk, sour cream, salt and pepper until well mixed. Heat butter over medium high heat in 8" skillet, pour egg mixture into skillet. Run a soft spatula around the edge of the eggs letting the runny egg go under the eggs that are beginning to set up. When the eggs are almost completely set, still some of the runny egg on top sprinkle your topping on top of the omelet, cover with a lid for about 3 minutes until the center of the omelet is set. Slide the omelet onto your plate or onto a soft tortilla and add salsa for a breakfast burrito.
