Steps:
- 1. Preheat oven to 350 degrees F.
- 2. Grease a 10-inch pie dish (I prefer Pyrex glass dish).
- 3. Spread apples evenly in dish. Sprinkle with maple syrup and dot with 2 tbsp. butter.
- 4. In a medium bowl, beat eggs, sugar, butter and vanilla together until fluffy.
- 5. Add baking powder, salt and flour until blended.
- 6. Spread batter over apples and bake for 45 minutes or until apples are tender. Cool slightly.
- 7. Whip cream, drizzle maple syrup over top and fold in gently.
- 8. Serve cake warm and top with the maple whipped cream.
