Being from So California originally I had never heard of pimento cheese. Once I tasted it I was hooked. But....way too many calories for me to have it as anything more than occasional treat. So, I went to work trying to make it as low fat as I could and still have that great flavor. I just made this and it's resting comfortably in the fridge. Might have to "tweak" it a bit, but here goes! Cooking time is chilling time.

Steps:
- In a food processor blend the first 5 ingredients until smooth. Add 1 c cheese, blend just until mixed.
- Stir in remaining cheese and chill for at least 2 hours.
