Loaded Carrot & Potato Soup image

This is very good for breakfast.Because potato has a lot of health benefits. It fight cancer, control your diabetes and get stronger bones by eating these nutritious spuds.

Number Of Ingredients 13

2 slice(s) bacon, halved
1 large potato, mashed
1 large carrots, cubed
3 sprig(s) parsley,chopped
3 sprig(s) scallions
2 tablespoon(s) flour
2 large onions, prechopped
2 tablespoon(s) garlic, prechopped
1 - knorr cubes or any kind of seasoning available in the area
1 1/2 cup(s) water/chicken stock
1 cup(s) evaporated milk
- freshly ground black pepper
- salt to taste

Steps:

  • Boil patato until tender,remove the skin, cut in half, cool slightly, mashed. Set aside.
  • Heat oil in a saucepan over medium-high heat. Add onion & garlic, sauté 3 minutes.Add carrots.Combine flour and 1/2 cup milk; add to pan with 1 1/2 cups water. Put in the knorr chicken cubes. Bring to a boil; stir often. Cook 2 minutes,add salt and pepper.
  • Remove from heat. Add in the mashed potato. Stir. Serve. Top with cheese,scallions,chopped parsley, & bacon. Enjoy cooking
