KALE W/ BACON AND ONIONS image

Yield 4 to 6 servings

Number Of Ingredients 9

2 slices bacon
2 onions sliced into rings
1 cup beef stock
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. nutmeg
1 1/4lbs. kale, leaves torn into bite-size pieces
discard ribs and stems
1 TBSP butter

Steps:

  • 1) Fry bacon in 6 QT saucepan over med. high heat until crisp. Remove from pan using slotted spoon, drain on paper towels. 2) add onion rings to pan, place over med-low heat and cook until just golden brown, about 5 minutes. 3) Set several onion rings aside for garnish. 4) Add stock, salt, pepper, and nutmeg to pan. Crumble bacon on top. Bring to a boil. 5) Stir in Kale. Reduce heat to medium-low, cover and cook until kale is just tender but retains some of it's shape, 11-15minutes, stirring occasionally. 6) Add butter and toss gently. Season with salt and pepper, if desired. 7) Turn into a heated serving dish. Garnish with onion and serve.
