Italian Baked Chicken Breasts image

I wanted to make a special dinner for my mother's 91st birthday today. She likes chicken breasts and really likes them made with the Kraft Fresh Take product-it has various flavors with bread crumbs and cheese. I did not have any and it is too cold to go to the grocery store. So, I attempted to make my own. So I threw some...

Time 1h15m

Number Of Ingredients 11

1 c italian bread crumbs
1/4 c grated parmesan cheese
1/4 c finely shredded cheddar cheese
1/4 c extra virgin olive oil
1/2 tsp salt
1/2 tsp pepper
1/2 tsp basil, dried or fresh finely chopped
1/2 tsp garlic powder
1/2 tsp lemon pepper seasoning
1/2 tsp paprika
6 skinless, boneless chicken breasts (i am sure you can also use skinless boneless thighs)

Steps:

  • 1. Spray a 9 x 13 baking sheet with cooking spray or olive oil (I like to use the non stick foil and then spray the foil - makes clean up so much easier)
  • 2. Mix together the Italian bread crumbs & all of the listed seasonings as well as the cheeses.
  • 3. Blend the olive oil into the bread crumb & seasoning mixture; you may need to add more oil/bread crumbs until it is a rather thick consistency to allow it to stay atop the meat.
  • 4. Pat the bread crumb mixture on top of the chicken and bake for 30 - 45 minutes based upon the thickness of the chicken.
