2 egg whites
2 teaspoons balsamic vinegar
1/3 cup dry bread crumbs
1/2 teaspoon dried parsley flakes
1/4 teaspoon garlic powder
1/4 teaspoon garlic salt
2 boneless skinless chicken breast halves (4 ounces each)
Butter-flavored cooking spray
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a shallow bowl, beat egg whites and vinegar. In another shallow bowl, combine the bread crumbs, parsley, garlic powder and garlic salt. Dip chicken in egg mixture, then coat with crumb mixture., Place in an 8-in. square baking dish coated with cooking spray; lightly coat chicken with butter-flavored spray. Sprinkle with salt and pepper. Bake, uncovered, at 375° for 20-25 minutes or until a thermometer reads 170°.

4 slices OSCAR MAYER Deli Fresh Smoked Ham
1 cup loosely packed fresh basil leaves
1/2 cup KRAFT 2% Milk Shredded Italian* Three Cheese Blend
4 small boneless skinless chicken breasts (1 lb.), pounded to 1/4-inch thickness
1/2 cup sliced roasted red peppers
1 clove garlic, minced

Steps:

  • Heat oven to 350°F.
  • Top each ham slice with basil and cheese; roll up tightly. Place 1 ham roll on each chicken breast; roll up tightly, starting at one short end. Place, seam sides down, in 13x9-inch baking dish.
  • Bake 35 min. or until chicken is done (165ºF).
  • Blend peppers and garlic in blender until smooth; spoon into microwaveable bowl. Microwave on HIGH 30 to 40 sec. or until heated through. Serve over chicken.

She likes chicken breasts and really likes them made with the Kraft Fresh Take product-it has various flavors with bread crumbs and cheese. I did not have any and it is too cold to go to the grocery store. So, I attempted to make my own. So I threw some...

1 c italian bread crumbs
1/4 c grated parmesan cheese
1/4 c finely shredded cheddar cheese
1/4 c extra virgin olive oil
1/2 tsp salt
1/2 tsp pepper
1/2 tsp basil, dried or fresh finely chopped
1/2 tsp garlic powder
1/2 tsp lemon pepper seasoning
1/2 tsp paprika
6 skinless, boneless chicken breasts (i am sure you can also use skinless boneless thighs)

Steps:

  • 1. Spray a 9 x 13 baking sheet with cooking spray or olive oil (I like to use the non stick foil and then spray the foil - makes clean up so much easier)
  • 2. Mix together the Italian bread crumbs & all of the listed seasonings as well as the cheeses.
  • 3. Blend the olive oil into the bread crumb & seasoning mixture; you may need to add more oil/bread crumbs until it is a rather thick consistency to allow it to stay atop the meat.
  • 4. Pat the bread crumb mixture on top of the chicken and bake for 30 - 45 minutes based upon the thickness of the chicken.
