INDONESIAN CURRIED EGGS image

Main Ingredients:
1 cup coconut milk
1/2 cup water or chicken stock
4 hard boiled eggs
2 tablespoons vegetable oil
Spices etc. for curry:
3 tablespoons minced onions
1 garlic clove, minced
1 teaspoon sambal trassi (alternatively: any other sambal, or chili garlic sauce)
2 candlenuts, roasted (alternatively: 2 macadamia nuts)
1/2 teaspoon coriander
pinch cumin
1/2 teaspoon turmeric
1/2 galangal, powdered (alternatively: ginger powder)
pinch ginger powder
salt

Steps:

  • Steps: 1. Peel the hardboiled eggs and halve them lengthwise 2. With a food processor, blend the spices etc. into a paste 3. Gently fry the curry paste in the oil 4. While stirring, add the coconut milk and water/stock 5. Add the eggs and simmer until sauce is reduced by half
