Homemade Vegetable Soup image

I use leftover vegetables that maybe in my refrigerator. The V8 juice gives the broth delicious favor.

Number Of Ingredients 14

1 package(s) beef stew or beef bones
1 jar(s) v8 vegetable juice
1-16 oz package(s) frozen soup vegetables
1-16 oz package(s) frozen corn (or your favorite vegetable)
1 stick(s) celery, chopped
1 - bay leaf
1/2 teaspoon(s) thyme, dried
1/2 teaspoon(s) oregano
1/2 teaspoon(s) garlic powder
1/2 teaspoon(s) onion powder
1/2 teaspoon(s) italian seasoning
1 medium onion, finely chopped
1-2 - white potatoes, cubed
- salt and pepper to taste

Steps:

  • Put water in pot (about 3-4 cups), add beef stew or beef bones. Bring to boil, reduce heat and simmer for one hour until meat is tender.
  • Add V8 juice, soup vegetables, corn, and spices. Bring to a boil, reduce heat and cook about 45 minutes. Last 15 minutes, add potatoes and cook until they are tender.
  • Season with salt and pepper. (Note: use any vegetables; leftover vegetables or beans are very good in this soup.)
