Hearty Brunch Casserole image

We just love it as is. You can use whatever meat and veggies your family likes and add salt and pepper to taste. Sausage and/or bacon would work as well. There are endless possibilities to try.

1/2 lb lean ground beef
2 slice hard salami, diced
2 slice sandwich pepperoni, diced
1/4 c diced onion
1 raw carrot diced
1/2 c snipped fresh spinach
1/2 stick butter
5 slice sandwich bread
8 eggs
1/4 c milk
1/2 c shredded cheddar cheese

Steps:

  • 1. Preheat oven to 375°
  • 2. Brown ground beef and drain. Add salami, pepperoni, carrot and onion - then mix well.
  • 3. Melt the butter and coat the bottom of the 13x9 pan. Lay the bread slices on top of the melted butter to form the bottom layer
  • 4. Sprinkle the meat/veggie mixture on top of the bread, then the spinach.
  • 5. Beat the eggs and milk with a fork until well combined then gently pour over the mixture in the pan then top with shredded cheddar
  • 6. Bake for 20 minutes at 375°. Cut into 8 servings and ENJOY.
