I was having a girlfriend over for lunch one day & I wanted something different. I had forgotten to take the chicken out of the freezer that I had planned on cooking. All I had in the refrigerator was vegetables and cheese....and one container of grands biscuits. Two biscuits fed the both of us an individual sized pizza. All...

1 grands biscuit
assorted begetables (leftover is fine)
cheese of choice - could be mozzarella - could be cheddar

Steps:

  • 1. One grands biscuit per person will be used. If just cooking for one.....all you will need will be one biscuit. Remove one grands biscuit from the package and pack the others into a plastic bag. Sprinkle a little flour into the bag and replace in refrigerator
  • 2. Allow the biscuit to reach room temperature. Sprinkle some flour on the work surface and coat the rolling pin in flour. Begin to roll out the grands biscuit until it becomes thin as a piece of paper - and the size of an individual pizza - transfer the dough to a baking pan before loading with your goodies
  • 3. Now pick your toppings. The first two pizzas I made had leftover fried mushrooms, garlic, & onions, fresh sliced tomato, & mozzarella. I've made them with and without meat. I've made vegetarian - using whole grain biscuits, sausage substitute, and vegetarian cheddar shreds. The toppings are your choice.....have fun with it
  • 4. Pre-heat oven to 350 degrees. When the grands biscuit is loaded - I place it into the oven and bake for 10 minutes. This can be used for a lunch - or a dinner with the addition of a soup or salad. Two pizzas will fit on a large cookie sheet. There are NO rules to this....make whatever you think will taste yummy!
