Garlic Mashed Cauliflower image

This is a great side dish for those going low carb or just for something different. It is very creamy and a nice alternative to mashed potatoes. Instead of onion powder I usually use 2 packets of Goya Salad & Vegetable Seasoning.

Number Of Ingredients 6

1 head cauliflower or 2 (16 ounce) steam bags frozen cauliflower
4 tablespoons melted butter
2 -3 teaspoons onion powder or 1 tablespoon minced onion
2 -4 tablespoons garlic powder (to taste) or 2 -4 teaspoons minced garlic (to taste)
1 -2 teaspoon salt & pepper, to taste
2 -4 tablespoons parsley flakes (to garnish)

Steps:

  • If using a head of cauliflower, wash & cut into pieces.
  • Steam until soft in the microwave or on the stove.
  • In a food processor (or mash by hand) mash cauliflower, butter, seasoning, garlic, salt & pepper.
  • Mash until smooth. This can be done in two batches.
  • Put in a serving bowl & serve warm.
  • Top with parsley flakes for garnish, if desired.
