GARLIC LEMON BUTTER SAUCE WITH PAN CHICKEN image

Garlic Lemon Butter Sauce
5-6 Cloves minced garlic
8 Tbs butter
¼ cup - fresh flat leaf parsley - fine chopped
salt and pepper to taste
1 cup - white wine
1 ½ cup - chicken broth
2 Tbs lemon juice
2 Tbs flour
2 Chicken breast halves
Trader Joe's Lemon Pepper Pappardelle Pasta

Steps:

  • Sauce -- Melt and very lightly brown butter and garlic in pan over medium heat. Mix in parsley, salt/pepper. Add white wine, chicken broth, lemon juice. Mix the flour with a little bit of the liquid in a small cup then add it all back to the pan. Bring to boil, simmer, reduce by half. Chicken -- I just used a couple split chicken breasts, pounded out evenly. 2 Tbs olive oil in a pan, 4-5 minutes on each side until browned, still moist in middle. Finish -- Toss Sauce with cooked Trader Joe's Lemon Pepper Pappardelle Pasta, lay chicken breasts on top. a Sprig or two of fresh parsley on top is nice as well.
