Family Fav Crock Pot Corn Casserole image

We loved the method of cooking this holiday favorite. Using the Crock Pot opens space in the crowded oven. The corn casserole turns out sweet and creamy with a hint of savory flavor from the seasoning. This easy side dish will quickly become a family favorite.

Number Of Ingredients 10

8 oz light cream cheese
2/3 c egg substitute
1/2 c sugar
8-1/2 oz corn muffin mix
2-1/2 c frozen corn, defrosted
16 oz can creamed corn
1 c evaporated skim milk
2 Tbsp butter, melted
1 tsp Mrs. Dash table blend
1/4 tsp freshly ground nutmeg

Steps:

  • 1. Grease your slow cooker or use a liner.
  • 2. Beat the cream cheese. Stir in the eggs and sugar; blend well.
  • 3. Add the corn muffin mix and remaining ingredients; blend well.
  • 4. Pour into slow cooker and cook on high for 2-4 hours, depending on your Crock Pot. DO NOT double this recipe. The middle will not cook through.
