Frittata for Two image

We love eggs for breakfast especially with added goodies. I used a combination of red bell peppers and poblano peppers, but it's up to you. Zero(0) WW points

cooking spray
5 eggs, beaten
1 c mixed peppers, chopped
1/4 c onion, chopped
1/2 c mushrooms, chopped
1 Tbsp real bacon bits
1/4 tsp garlic powder, or 1 clove minced
2 tsp parmesan cheese, grated
1/2 tsp italian seasoning or dried basil
salt and pepper, to taste
6 grape tomatoes, halved

Steps:

  • 1. Break eggs into small bowl and lightly beat. Set aside. Preheat oven to 350ºF.
  • 2. Spray cooking spray into oven-safe skillet. Add veggies and bacon bits. Saute on med-hi heat until soft. Add eggs. Cook until bottom is set.
  • 3. Transfer skillet to oven. Bake for 8-10 minutes until eggs are set. Carefully remove hot skillet and sprinkle egg mixture with parmesan.
  • 4. Serve with halved grape tomatoes.
