Steps:
- Wash beans. Cover in large container with water. Soak overnight. Drain. Add 2 qts. water and ham or ham hocks. Bring to boil. Stir occasionally. Simmer for 2 - 2 1/2 hours. Separate broth; cool; scrape off fat. Preserve meat from hocks and discard fat. Combine broth and beans again. Add remaining ingredients. Simmer for another 30 minutes This makes a large pot of soup and is even better made a few days ahead .and aged in refrigerator. Serves approx 10.
