½ cup dry split peas
⅓ cup beef bouillon granules
¼ cup pearl barley
½ cup dry lentils
¼ cup dried onion flakes
2 teaspoons dried Italian seasoning
½ cup uncooked long-grain white rice
2 bay leaves
½ cup uncooked alphabet pasta

Steps:

  • In a 1 1/2 pint jar, layer the split peas, bouillon, barley, lentils, onion flakes, Italian seasoning, rice, and bay leaves. Wrap the pasta in plastic wrap, and place in the jar. Seal tightly.
  • Attach a label to the jar with the following instructions: Friendship Soup ADDITIONAL INGREDIENTS: 1 pound ground beef, black pepper to taste, garlic powder to taste, 1 (28 ounce) can diced tomatoes - undrained, 1 (6 ounce) can tomato paste, and 3 quarts water. TO PREPARE SOUP: Remove pasta from top of jar, and set aside. In a large pot over medium heat, brown beef with pepper and garlic; drain excess fat. Add diced tomatoes, tomato paste, water, and soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the pasta, cover, and simmer 15 to 20 minutes, or until the pasta, peas, lentils and barley are tender.

1/2 cup dried green split peas
1/3 cup beef bouillon granules
1/4 cup medium pearl barley
1/2 cup dried lentils
1/4 cup dried minced onion
2 teaspoons Italian seasoning
1/2 cup uncooked long grain rice
1/2 cup uncooked alphabet pasta or other small pasta
ADDITIONAL INGREDIENTS:
1 pound ground beef (90% lean)
3 quarts water
1 can (28 ounces) diced tomatoes, undrained

Steps:

  • In a 1-1/2-pint jar, layer the first seven ingredients in the order listed. Wrap pasta in a small sheet of plastic wrap; add to jar. Seal tightly. Store in a cool, dry place for up to 3 months., To prepare soup: Remove pasta from jar and set aside. In a Dutch oven over medium heat, cook the beef until no longer pink; drain. Add the water, tomatoes and soup mix; bring to a boil. Reduce heat; cover and simmer for 45 minutes. Stir in the reserved pasta; cover and simmer for 15-20 minutes or until the pasta, peas, barley and lentils are tender.

1/2 cup dry split peas
1/3 cup beef bouillon granules
1/4 cup pearl barley
1/3 cup dry lentils
1/4 cup dried minced onions
2 teaspoons italian seasoning

1/2 cup alphabet macaroni or other small macaroni

1 pound of ground beef

1 28 ounce can of diced tomatoes

Steps:

  • 1. Preparation Instructions: In a 1 1/2 pint jar, layer the first eight ingredients in the order listed. Seal tightly. Yield 1 batch. To prepare soup, carefully remove macaroni from the top of the jar and set aside. In a large saucepan, or Dutch oven, brown beef; drain. Add the water tomatoes and soup mix. Bring to a boil. Reduce heat, cover and simmer for 45 minutes. Add the reserved macaroni, cover and simmer for 15 to 20 minutes or until the macaroni, peas, lentils, and barley are tender. Yields 4 quarts.

1/2 cup dry split peas
1/4 cup pearl barley
1/2 cup brown rice
1/2 cup lentils
1/4 cup dehydrated onion, minced
4 teaspoons Italian seasoning
3/4 teaspoon salt
3/4 cup whole wheat small pasta
1-quart Mason jar with lid
6-inch circle of a Christmas print or fun print cotton material
several cotton balls to create a soft rounded lid
2 small clear cellophane bags or zippered plastic bags for the seasoning and the pasta
A blank recipe card or sheet of paper to include the directions to prepare the soup
Red or green curling ribbon

Steps:

  • Combine the dehydrated onion, Italian seasoning and salt in one of the small plastic bags. Tie closed with a piece of the ribbon. Place the pasta in the other plastic bag and tie it closed also. Place both of the bags in the jar. Place sealing lid on top of jar. Place several cotton balls on top of lid and cover with fabric circle right side. Position outer ring over fabric and twist to secure attractively. Directions to enclose with the gift: Type or hand write the following directions to include with the soup mix: Cook 1 pound of lean ground beef in a large pot. While meat is cooking remove the seasoning and pasta bags from the jar. Pour the remaining contents of jar in a colander, wash thoroughly and drain. When meat is cooked, drain the liquid but leave meat in pot. Add 3 quarts of water, 6 cups diced canned or fresh tomatoes and the seasoning mix to the pot. Cover and simmer for one hour. Add pasta, and simmer another 15 minutes. This recipe makes 8 servings. Each serving contains approximately 201 calories and 4 grams of fat. Another recommendation is to consume at least half of all grains as whole grains and to increase whole grain intake by replacing refined grains with whole grains. My favorite. My mother gave me this recipe in 1998 when I left home. I missed the home cooked soup that she made all growing up and asked her for the recipe. She made it and wrote it down for me. I am sorry for those that think it came from a 1999 book; isn't it great how a recipe is recycled and recycled over time everyone will have the same thing their grandparents ate and think it is cool. Have fun with this recipe and use different beans, veggies, and amounts. It is fun to play with!

1 cup friendship bean soup mix, recipe follows
4 cups water
1 slice bacon, chopped
1 onion, chopped
1 clove garlic
1 can tomatoes with green chilies, 10 oz. such as rotel
8 oz. ham or smoked sausage, chopped
salt and pepper to taste

Steps:

  • 1. Mix Friendship bean soup mix and water in large pan. soak for 8 to 12 hours. Add bacon, onion and garlic. Cook for 1 1/2 hours. Stir in tomatoes with green chiles and ham. Cook for 1 hour or until beans are tender. Season with salt and pepper. Friendship Bean Soup Mix: 1 pkg (1 lb.) of 5 or 6 of the following: Red kidney beans Small white beans Split green peas Black eyed peas Pinto beans Black beans Lima beans Navy beans Mix the beans and peas in large bowl. Fill pint jars with the bean mixture. Cover, tie one ribbons and give as gifts to friends.

1 lb dried barley pearls
1 lb dried pinto bean
1 lb dried navy beans
1 lb dried great northern beans

Steps:

  • Combine and mix well.
  • Divide into 2 cup packages for home or for gifts with recipe included: Soup Recipe: 2 c.
  • Friendship Soup Mix, 2 qt.
  • water, 3 stalks celery,chopped, 1 large onion,chopped, 1 lb.
  • diced ham, 1 clove minced garlic, 1 (16 oz.) can chopped tomatoes, 1 (10 oz.) can tomatoes with green chilies,chopped, 1 tsp.
  • salt, 1/2 tsp.
  • pepper.
  • Wash the soup mix with water and soak overnight.
  • Drain in the morning.
  • Add beans to water,celery,onion,ham and garlic.
  • Cover and bring to a boil.
  • Reduce heat and simmer 1 1/2 to 2 hours,until beans are tender.
  • Add remaining ingredients and simmer 30 minutes,stirring occasionally.
  • Makes 8-10 servings.

Butter beans
Garbanzos
Small red beans
Kidney beans
Great Northern beans
Anasazi beans
1/2 lb ham
1 large onion
1 20oz can of tomatoes
1 pod red pepper or 1 Tbs chili powder
juice of 1 lemon
salt and pepper to taste
1/2 cup sliced celery (optional)
1/2 cup sliced carrots (optional)
1 cup cubed potato (optional)
leftover beef, ham, or turkey (optional)

Steps:

  • Sort out any misshapen or discolored beans and wash thoroughly. Prepare beans for cooking via one of the following methods: 1. Place in a large container, cover with water and add 1 Tbs salt. Soak overnight. In the morning, drain. 2. Bring beans to a boil for 2 min in 4 cups water per cup of bean mix. Turn off heat and let sit 1 hr. Pour off water. Add 2 qts of water and 1/2 lb of ham. Bring to a boil. Stir occasionally. Simmer for 2 to 2 1/2 hours, then add remaining ingredients. Simmer another 30 minutes (60 minutes if optional vegetables are added).

1 large onion, thinly sliced
2 tablespoons vegetable oil
1-1/2 pounds beef top sirloin steak, cut into thin slices
1 cup sliced celery
2 cans (14-1/2 ounces each) beef broth
1 tablespoon cornstarch
2 tablespoons soy sauce
1 can (15 ounces) mixed vegetables
2 cups cooked fine egg noodles
1 package (10 ounces) fresh spinach, torn
1/4 teaspoon pepper
Chow mein noodles, optional

Steps:

  • In a Dutch oven or soup kettle, saute onion in oil until tender. Remove and set aside. In the same pan, stir-fry beef, a few slices at a time, until no longer pink. Add celery; stir-fry for 2-4 minutes or until crisp-tender. Return onion and meat to pan. Add broth. , In a small bowl, combine cornstarch and soy sauce until smooth. Gradually add to pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in vegetables, egg noodles, spinach and pepper; heat through. Garnish with chow mein noodles if desired.

Friendship Soup
1/4 c. lima beans
1/4 c. kidney beans
1/4 c. pinto beans
1/4 c. lentils
1/4 c. yellow split peas
1/4 c. white pea beans
2 quarts water
1/2 lb. ham or ham hocks
large can tomatoes
juice of whole lemon (1/3 cup)
salt and pepper to taste (about 2 tsp. salt and 1/2 tsp pepper)
1 whole onion chopped
1/4 tsp red hot pepper
2 tsp. chili powder

Steps:

  • Wash beans. Cover in large container with water. Soak overnight. Drain. Add 2 qts. water and ham or ham hocks. Bring to boil. Stir occasionally. Simmer for 2 - 2 1/2 hours. Separate broth; cool; scrape off fat. Preserve meat from hocks and discard fat. Combine broth and beans again. Add remaining ingredients. Simmer for another 30 minutes This makes a large pot of soup and is even better made a few days ahead .and aged in refrigerator. Serves approx 10.
